Baseball. The Area 51's baseball team (worst team nickname in sports, in my opinion) is a triple-A team. Plenty of good seats still available at all times.
Golf. Vegas & golf go hand-in-hand like peanut butter & jelly. The Las Vegas Invitational (Tiger Woods' first professional win) is a true sporting event LV loves, taking place at three courses around town, with the TPC Summerlin the home base. If you can get into a hospitality tent, that is the way to go. You'll have to get tight with some Las Vegas bigwig, but it may be worth it.
